The texture may range from semi-soft to semi-firm, usually the latter. The interior paste has many small holes in it and is stark white in color. The flavor is wonderfully goat-esque without being too strong. It has a fruity, wine-ish aspect as well as an earthy counterpart. The finish is tangy and slightly nutty.
